Tangy Meyers Lemon Sorbet

This is like a scoop of lemonade, so refreshing on a hot summers day!

Meyers Lemon Sorbet

Serves 8-10


1 cup granulated sugar

2 teaspoons fresh lemon zest

1 ½ cups coconut water (regular water can be used)

2 teaspoons fresh lemon zest

1 pinch salt

½ cup fresh squeezed Meyers Lemons juice (reserve the rind for serving)

1 Tablespoon Limoncello liquor (optional)

Stir all the ingredients together till the sugar dissolves.  Chill for 30 minutes

Pour ingredients into Ice Cream Machine and churn till desired consistency is achieved.  (I go till the paddle stops approximately 50 minutes.

Use an ice cream scoop to scoop into lemon shell halves and serve.
