These are light and delicious!

Corn Fritters

4-6 servings


1 ¼ cup Self-Rising Flour

½ teaspoon granulated sugar

¼ teaspoon salt

¼ teaspoon ground black pepper

¼ teaspoon cayenne pepper

2 teaspoons unsalted butter, melted

1 large egg, beaten

1 teaspoon fresh parsley, chopped

1 cup cooked corn (I prefer fresh but frozen or canned work too)

Oil for frying

Prepare fryer or pan by adding oil and bringing oil to 325 degrees.

Whisk together all the ingredients for the fritters and let rest 10 minutes.

When oil achieves perfect temperature drop by spoonful into the oil.

Turn with tongs occasionally and cook till golden brown.

Drain fritters on a paper towel after removing from oil.

Sprinkle with additional salt and serve hot.
