Coffee House Egg Bites in a Pressure Cooker?!

I adore the Sous Vide Egg Bites from Starbucks! The roasted red pepper egg whites are one of my favorite things! I have done the egg bites in little mason jars in a Sous Vide bath, however they do require more time and effort than I have regularly.I was visiting with my bonus sister Rosie recently and she mentioned she had just bought the Egg bite equipment for her Instapot. When I first considered doing the egg bites in the pressure cooker, my first thought was they may be tough. Then I considered how delicious cheesecake and flan come out in an electric pressure cooker and I started to experiment.I had some silicone soufflé cups I had purchased at Bed Bath and Beyond which I use to make pressure cooker cheesecakes.

I put a cup of water in the pressure cooker, added a steamer rack, I then placed the cups onto the rack and sprayed with nonstick.

I tested several recipes using eggs and heavy cream and eggs with low-fat cottage cheese, I preferred the heavy cream. I puréed the egg and dairy with a blender with salt and pepper, I found adding the red peppers or spinach or ham did better if I just placed that into each cup before adding the egg mixture.

I did not cover my egg bites, I just pressure cooked them for 6 minutes. They were remarkable!! I would say they were as delicious if not even more tender. I think glass soufflé cups or custard cups could be used. I tried to find a link for my cups, I bought 6 for $1.99, however I could not find that same deal online. I am sure the system on Amazon would be worth the investment, I will share my cheesecake and flan recipes at a later date.

Coffee House Egg Bites Recipe-

3 large eggs

1/4 cup heavy cream

Pinch kosher salt

Pinch fresh ground pepper

Pinch nutmeg (optional)

1/4 cup shredded cheese (Parmesan, cheddar, Swiss)

1/4 cup other- spinach, roasted red peppers so on, do not exceed 1/4 cup

Non stick spray or butter

6 2-4 ounce silicone or glass baking cups

Stainless rack

Electric Pressure Cooker

Place the eggs, cream salt, pepper, nutmeg and shredded cheese into a blender and purée till smooth about 30 seconds.

Add a cup of water to the pressure cooker insert then place the rack in the pressure cooker.

Spray baking molds with nonstick spray.

If you are using another ingredient like roasted red peppers divide the ingredients between the cups.

Pour the egg mixture into the cups evenly and place cups on the rack in the pressure cooker.

Secure the pressure cooker lid and set the timer for 6 minutes.

When cook time is complete and pressure is released, carefully remove the cups and invert onto platter.

Serve warm!
