Easy Asian Salad with Rotisserie Chicken

Easy Asian Salad with Rotisserie Chicken is a delicious quick salad recipe which is so good for you! Gone are the days when salads meant lettuce tomato and cucumber, now they are filled with lots of delicious, nutritious, colorful vegetables and fruits.

When raising my family, I tried to put dinner on the table every night. There were lots of nights when I needed to get creative to make a delicious dinner on a dime on the fly. One of the secret ingredients that saved me many nights was a rotisserie chicken from the deli. The rotisserie chicken would become many things from tacos to salads and many other dishes, but that is another blog.

Rotisserie Chicken

Another staple for a busy evening was salad as the main course, we would do this once or twice a week. When creating the concept of a mixture for the main course salad, I like to start with a theme. For instance, some nights, it’s a Mediterranean theme, some nights southwest, once I have chosen them the next thing to consider is what vegetables or fruits would go with that theme. After I plan my ingredients, I then consider how I will prep them, for instance, in a chopped salad, I tend to dice, with this Asian slaw theme I choose matchstick. Obviously, you can mix it up, but here is my method of creation. After I have my theme, my plan on how to prep the next thing to consider is non produce ingredients: protein, like rotisserie chicken or grilled chicken, shrimp, steak, or salmon. In addition to the protein, a great salad usually has something crunchy, like a Caesar salad has croutons, taco salad tortilla strips, for the Asian them I choose crunchy rice noodles. The last consideration is the dressing, on nights when I did not have time to make homemade I would buy a good dressing from the refrigerated section of the grocery store and I would add stuff to make it my own, for instance for a southwest salad dressing I would use a good Ranch Dressing then add in diced jalapenos and fresh chopped cilantro. For this salad, I added fresh lime juice and a touch of Siracha. These things helped to create a fun, delicious meal on a super busy night. This recipe for Asian Slaw would work perfectly with seared tuna, salmon, shrimp or tofu. I have written the recipe for the dressing from scratch, but feel free to cheat if you have to.

Store bought Dressing

Easy Asian Salad with Rotisserie Chicken

Serves 4

1 rotisserie chicken ( taken off the bone and shredded)

1 cup shredded purple cabbage

1 cup Romaine Lettuce Sliced Thin

½ red bell pepper julienned

1 small cucumber, peeled then julienned

1 small leek, white part only sliced into thin strips

1 carrot julienned

½ cup baby corn diced

½ cup fresh spinach leaves

1 tablespoon fresh cilantro leaves chopped

3 tablespoons Sesame Ginger Dressing. ( See Below)

1 tablespoon fresh lime juice

1 teaspoon Siracha (optional)

Rice noodles (garnish)


Prep all the ingredients then toss in a large salad bowl.

Toss with dressing then sprinkle with rice noodles.

Serve Cold.

Sesame Ginger Dressing for Asian Slaw

¼ cup low sodium soy sauce

¼ cup fresh lemon juice

1/4 cup avocado oil

1 tablespoon dark sesame seed oil

2 tablespoons fresh grated ginger root

2 tablespoon rice wine vinegar

1 tablespoon brown sugar

1 tablespoon sesame seeds

Pinch sea salt

½ teaspoon fresh ground pepper


Whisk all the ingredients together and pour over the Asian Slaw.
