Herb Crusted Boneless Leg of Lamb Serves 4-6 2 tablespoons olive oil 2 medium cloves of garlic, peeled 3 tablespoons fresh rosemary leaves 2 tablespoons fresh thyme ¼ cup fresh parsley leaves 1 boneless leg of lamb 3 – 4 pounds 1 teaspoon kosher salt 1 teaspoon pepper Place rack in center position in the oven and preheat oven to 375 degrees. In the bowl of a food processor or chopper fitted with chopping blade, add 1 teaspoon oil, garlic cloves, rosemary, thyme and parsley. Process several minutes to make a smooth paste. Scrape onto a plate. Rub the netted leg of lamb in the herb paste, pressing it in well. Season the roast with salt and pepper. Heat the roasting pan base on the stove for several minutes. Add the remaining oil and cook several minutes longer. Add the lamb to the roasting pan and sear good on all sides. Place the roasting pan uncovered in the oven and roast for 30 minutes per pound, or until an instant read thermometer inserted in the thickest point reads 130 - 135 degrees for medium rare. Transfer roast to a cutting board and let rest for 15 minutes Cut into half inch slices. Serve with mint jelly on the side.
