Description

Ingredients

I teaspoon extra virgin olive oil
1 small onion chopped
3 cloves garlic minced
1 small zucchini shredded
1- 28 ounce can San Marzano diced tomatoes (my favorite)
pinch sea salt, pinch black pepper
2 leaves basil chiffonade
5 pieces’ oven ready lasagna noodles
1 cup ricotta cheese
1 cup shredded mozzarella cheese divided
1/2 cup parmesan cheese divided
2 large eggs beaten
pinch nutmeg
1/4 cup chicken stock

Directions

Select Stir Fry on the Wonder Pot and set a timer for 30 minutes.

Add the oil to the Wonder Pot and let heat for 1 minute, add the onion.

Cook onion till translucent, about 3 minutes then add the garlic and zucchini.

With the lid open. Cook for 2 minutes.

Add the tomatoes and season with salt pepper and basil.

Close lid and let cook for 5 minutes.

Mix the ricotta with 1/2 the mozzarella and parmesan, add in the eggs and nutmeg.

Remove all but 2 cups of sauce from the Wonder Pot.

Break up two pieces of lasagna over the sauce.

Spoon the ricotta mixture over the noodles.

Top with more broken noodles.

Pour remaining sauce in and top with the remaining mozzarella and parmesan.

Pour in the stock, close the lid and cook over medium 30 minutes.
