Sun-Dried Tomato Turkey Breast Burgers

Ingredients

1 pound ground turkey breast
½ cup julienne sun-dried tomatoes in the oil, drained with ½ tablespoon oil reserved
2 cloves garlic, minced
6 leaves basil, torn
3 tablespoons Parmesan cheese, grated
1 teaspoon sea salt
½ teaspoon freshly ground pepper

Serve with –

Basil mayonnaise on a brioche bun with bib lettuce or spinach, with avocado and roasted red peppers

Preheat flip pan top and bottom over medium heat for 2-3 minutes per side.

Add ½ tablespoon of reserved tomato oil to the pan. Add the garlic and cook for 2 minutes with lid closed.

Remove the garlic from the flip pan and place in a large bowl to cool for 5 minutes.

Leave the remaining oil in the Flip Pan and let pan cool till burgers are made.

Add all the remaining ingredients to the bowl.

Gently mix the ingredients with your hands then form 4 equal sized burgers.

Again pre-heat flip pan top and bottom over medium-high heat for 2-3 minutes per side.

Add the burgers and cook for 4-5 minutes over medium-high heat.

Flip and cook 4 minutes longer.
