Quinoa Ground Turkey Breast Stuffed Peppers

Description

This recipe has no fat, low carbs, high protein and low calories. In my opinion better tasting than my traditional recipe. Lighten things.

Ingredients

6 sweet bell peppers
1-pound ground turkey Breast
1 cup rinsed Quinoa
2 cup chicken stock divided
1 small onion chopped fine
2 cloves of garlic minced
1 teaspoon salt
1/2 teaspoon fresh group pepper
1 14.5 ounce can petite diced tomatoes with onions and peppers
1 cup tomato sauce
1 tablespoon fresh parsley
1/2 cup shredded mozzarella cheese(optional)

Directions

Cut the tops off your peppers and scoop out membranes and seeds.

trim the bottom so peppers will sit flat.

Place rinsed Quinoa and 1 cup of quinoa to the wonder pot and press rice.

When the quinoa is finished cooking stir in the canned tomatoes and let cool.

combine the quinoa mixture with the raw ground turkey breast.

divide the mixture between the peppers.

Place the stuffed peppers, back in the Wonder Pot with remaining stock..

Pour the tomato sauce over the peppers. Close the lid, set Wonder pot on Stir fry and timer for 20 minutes,

If using cheese sprinkle with cheese cover and cook 5 minutes longer.
