Prime Rib in the Vertical Roaster

Description

Vertical Roaster Prime Rib
Serves 4- 6

4-6 pound Boneless Prime Rib
Oil
1 teaspoon kosher salt
1 teaspoon freshly cracked pepper
½ teaspoon granulated garlic
Nonstick spray

Remove the Prime Rib from the refrigerator at least 30 minutes before roasting.
Rub the roast with oil, combine the seasonings, and press them onto the entire surface of the roast. You can use Montreal Seasoning instead f the spices I suggested.
Assemble the roaster by putting the drip pan into the roaster.Vertical Roaster Drip Pan
Spray the stainless center post cover with nonstick spray and slide it over the heating element.
Slide on the stainless drip rack over the centerpost.
Slide the roast onto the center post, be sure to go directly through the center.
Place the lid on the vertical roaster.
Select high setting and set the timer for 10 minutes, make sure the center heating element light is not turned on.
When the 10 minutes has passed, set the heat to low and set the timer for 1 hour for a 4-pound roast, add 10 minutes of cook time per pound for medium-rare.
When cooking time is complete, let the roast sit for at least 5 minutes before using the hook to remove the roast and drip pan from the vertical roaster.

Let the roast rest 5 minutes longer before carving.

The slit from the centerpost is hardly visible when you carve the roast beef.

If you would like your roast cooked medium or well, I suggest adding 5 minutes longer per pound. I always use a thermometer; there are lots of things that can contribute to different cook times by buying a thermometer with a long stainless cable which you can set an alarm for what temperature you would like your roast is an excellent investment, I have included a link.
