Description

.Did you know that most electric pressure cookers or rice cookers make delicious yogurt? I used my Cook’s Companion Pressure cooker which has an 8 hour setting. The temperature for yogurt is the same as keep warm on most of the other brands. The key is getting the milk to the proper temperature, I use the brown saute button on mine, use what ever function will get your milk to simmer. Then wait to add the yogurt culture when the milk gets to approximately 105 F. But the very best yogurt culture, one without sugar and one with the most amount of cultures.

Making yogurt in your Pressure Cooker

How to make yogurt
Pour 3 quarts of whole milk into the ceramic insert.
Press the brown saute button then press start.
Bring the milk to a boil with lid off, stir occasionally, approximately 18 minutes for cold milk.
Once the milk comes to a boil turn off heat and let cool to 100- 110 degrees F, about 20 minutes.
You do not want the milk to hot when whisking in yogurt culture or it will kill the bacteria.
When milk cools to the perfect temperature whisk in 1/2 cup plain yogurt. The better the yogurt culture the better your yogurt will be,
Secure the pressure cooker lid, then press the menu button till yogurt illuminates, press start.
8 hours later…you can strain through cheesecloth to get an even stiffer yogurt. Remember to retain some of this yogurt to start your next batch.
