Tender falling apart beef
This is such a flavorful alternative to your usual pot roast.

Italian Pot Roast

Serves 4-6

In an hour you can have this delicious pot roast using your pressure cooker

2 tablespoons extra-virgin olive oil​​​

1 (4 pound) chuck roast​​​​

1 teaspoon salt​​​​​​

½ teaspoon freshly ground pepper​​​

¼ cup dry red wine​​​​​

1 cup beef stock​​​​​

1 medium onion, sliced​

3 garlic cloves, sliced

1 bell pepper, julienned

½ cup Giardinere Pickled vegetables

1 teaspoon garlic powder

1 teaspoon Italian herb seasoning

1 bay leaf

1 bottle (28 ounces) pasta sauce

pasta or polenta, cooked​​​​

Preheat oil in pressure cooker with lid off.

Season the roast with salt and pepper.

Add the roast to the pressure cooker and sear for 3 minutes on each side.

Remove roast to a platter and drain fat from pan.

Add wine and stock to deglaze the skillet; scrape up all the littlebits from the bottom.

Add the roast, onions, garlic, bell peppers, garlic powder, Italianseasoning, Giardinere and bay leaf to the pressure cooker; secure lid.

When pressure is achieved set timer for 60 minutes.

When cook time is complete and pressure is fully released, open lid with caution.

Discard the bay leaf then add the pasta sauce to the pressure cooker; secure lid.

When pressure is achieved set timer for 6 minutes.

When cook time is complete and pressure is fully released, open lid with caution.

Serve over your favorite pasta or polenta.
