Buffalo Chicken Mac n Cheese

Ingredients

6 Frozen Chicken Tenders
3 cups Dry Pasta
3 cups Chicken Stock
1 small onion minced
1 stalk celery minced
1 small carrot minced
½ cup of Buffalo wing sauce divided(see recipe)
½ cup whipped cream cheese
1 cup medium cheddar shredded
1 cup mozzarella shredded
½ cup Parmesan cheese grated
½ cup crumbled blue cheese
Crunchy onion straws

Directions

Place the chicken tenders, pasta, stock, onion, celery and carrots in the pressure cooker.

Secure the lid, set to high pressure and set timer for 10 minutes.

When cook time is complete and pressure released, stir in the cream cheese and half the wing sauce, stir in the remaining cheeses till smooth.

To serve, scoop mac n cheese into serving bowl, sprinkle with blue cheese crumbles, drizzle with wing sauce and top with crunchy onion straws.
