Instead of eggs in the morning, make these delicious blueberry Muffins made with Protein Powder. You don’t need to use the liners if you have our Cook’s Companion Bakeware…

Ingredients

1 cup soy milk
1 teaspoon apple cider, vinegar
1 cup whole-wheat, flour
1/2 cup vanilla protein powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/3 cup canola oil
1/3 cup sugar
1 1/2 cups fresh, blueberries

Preheat oven to 375 degrees.

In a large bowl, mix all the ingredients together except for the blueberries.

Line muffin tins with paper liners.

Fill each liner 3 tablespoons of batter.
