Salt and Vinegar Fries
3 russet potatoes, cut into ½ inch strips
5 cups water
1 cup distilled white vinegar
1 ½ tablespoons salt, divided
1 tablespoon oil
1 tablespoon corn starch
Oil for spraying
In a stock pot, bring water to a simmer.
Remove from heat, add vinegar, 1 tablespoon salt and stir until dissolved.
Cut and rinse potatoes, add to stock pot and soak for 1 hour.
In a large bowl, add remaining salt, oil and corn starch.
Pat dry potatoes and toss in oil mixture.
Place potatoes in air fryer basket; close basket.
Set timer for 25 minutes and temperature for 400 degrees.
Shake every 5 minutes, spray with oil and salt to taste.
For darker fries, cook additional 5 minutes.
