Sweet Potato Casserole
Serves 4 to 6
Cook time 12 minutes
4 sweet potatoes, peeled and quartered
1 cup chicken stock
1/2 cup orange juice
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon cinnamon
2 tablespoons butter
Non-stick cooking spray
Place all ingredients except butter, marshmallows, and non-stick cooking spray into the Instacooker; secure lid.
Set to steam and timer for 20 minutes.
When cooking is complete open lid and drain the potatoes, add butter and mash potatoes using potato masher.
Set oven to broil.
Apply non-stick to oven safe casserole and place potatoes into casserole; top with marshmallows.
Place casserole on center rack in the oven and cook for 2 minutes or until marshmallows are lightly toasted.
Remove potatoes from oven and serve.
